PAV BHAJI (SPICED VEGETABLE WITH BREAD)
A Popular snack from the western part of India. For many, it forms the main stay for working lunches.

INGREDIENT:
Potatoes - 250 gm.
Onions - 170 gm.
Tomatoes (cubes) - 225 gm.
Green peppers (cubes) - 150 gm.
Peas - 160 gm.
Ginger/garlic paste - 12 gm.
Cumin powder - 1.8 gm.
Chilli powder - 7.5 gm.
Coriander leaves - 6 gm.
(chopped)
Butter to cook.

Salt to taste.
METHOD:
Boil peas and potatoes and mash well. Heat butter in a pan, add ginger/garlic paste and the cubes of onions, tomatoes and green pepper and cook till tender. Add the mashed peas and potatoes and cook till all the vegetables form a smooth puree. Mash all the vegetables with a masher and add salt, coriander and cumin powder. Add one tablespoon of water and cook on low heat for 2 min. Before removing from the fire, add butter and garnish with coriander leaves. Serve hot with lemon wedges and buttered bread.
Time taken -- 30 minutes.
Serves -- 6.
