MODAK(SWEET RICE PATTIES)
A dessert from the western state of Maharashtra.

INGREDIENT :
Rice Flour - 300 gm.
Oil - 5 ml.
Salt a generous pinch.
For the Filling :
Desiccated coconut-2nos.
Jaggery (or sugar) - 800 gm.
Cardamom powder - 5 gm.
Rice Flour - 300 gm.
Oil - 5 ml.

Salt a generous pinch.
METHOD :
Boil 2 1/2 cups of water and add salt and oil. Add rice flour gradually, mixing continuously, so that no lumps are formed. Cook on slow fire till mixture is thick Remove and keep aside. Make a syrup out of jaggery (or sugar) and water, when fairly thick, add coconut and cook on a low flame.

Stir frequently to ensure that the mixture blends well. Add cardamom powder and cook till dry. Remove from fire and cool. Divide rice flour mixture into equal portion. Take each portion in the palm of the hand and form a cup. Insert a small portion of the filling in the center and pleat ends to fold over and cover. Press pleats together firmly. When all the patties have been made, steam cook them, for 20/30 mins. Serve hot or cool as preferred.
Time taken -- 1 1/2 hrs.
Serves -- 4.
