KHAJOOR KA HALWA (DATE PUDDING)
A north Indian dessert with dates. A middle eastern influence seen in many dishes of this region.

INGREDIENT :
Wheat flour - 400 gm.
Soft seedless dates - 400 gms.
Ghee (clarifed ghee) - 300 gm.
Rose water - 240 ml.
Cardamom powder - 5 gm.
Saffron
(soaked in 1 tspn milk) - 2.5 gm.
Sugar - 180 gm.
(or more if required)
METHOD :
Dry roast flour in a large pan, on low heat, stirring constantly until it turns golden in color. Add ghee gradually, mixing smoothly into the flour. When brown, stir in rose water and chopped seedless dates. Add sugar and mix well, ensuring that there are no lumps. Add powdered cardamom and saffron. Stir for 5 mins. Serve hot in a small bowls with chopped dates on the top.
Time taken -- 1 hr.
Serves -- 6.
