LEMON RICE
This is a traditional dish from the south Indian state of Karnataka.

INGREDIENT :
Long grained rice - 500gm.
Lime - 2 nos.
Oil - 50 gm.
Turmeric powder - 5 gm.
Fenugreek seeds - 5 gm.
Black gram - 20 gm.
Mustard seeds - 3.3 gm.
Bengal gram - 20 gm.
Asafetida - 2.5 gm.
Cashewnuts - 30 gm.
Peanuts - 30 gm.
Curry leaves A few leaves.
Whole red chilies - 10gms.
Salt to taste.
METHOD :
In a heavy bottomed pan, boil rice, and set aside. Roast and powder together fenugreek, turmeric and black gram, and mix with rice. Add salt and lime juice. Heat oil in a pan, fry nuts and remove. Add curry leaves, Mustard seeds, asafetida, bengal gram, red chilies, and brown. Remove from fire and add to rice. Mix well and garnish with nuts.
Serve hot, with any gravy dish.

Time taken -- 45 mins.
Serves -- 4.
