SABZI KOOTU(SPICED VEGETABLE MIX)
This recipe is from the southern part of India.

INGREDIENT :
Beans (diced) - 100gm.
Potatoes - 100 gm.
Pumpkins (cubes)-100gms.
Double beans(diced)- 100gms.
Drum stick ( pieces) - 50gm.
Onions (chopped) - 110 gm.
Cumin seeds - 3 gm.
Pepper powder - 2.5 gm.
Coconut-milk - 60 ml.
Tomato - 80 gm.
Chili powder - 10 gm.
Turmeric powder - 2.5 gm.
Oil - 38 ml.

Salt to taste.

METHOD :
Heat oil. Add chopped onions and cumin seeds and fry. Make a paste of chili powder, coriander powder, Garam-masala powder, turmeric powder, pepper powder and tomatoes and add to onions. Stir, fry and add all vegetables with 1 1/2 cup water and salt. Cook till done. Add coconut-milk and cook for a further 5 mins. Serve hot with hot puris.

Time taken -- 1 hr.
Serve -- 4.
