VEGETABLE KOFTA CURRY
A north Indian recipe that makes a delicious curry for a vegetarian meal.

INGREDIENT :
Vegetables (grated) - 500 gms.
(carrot,cabbage, cauliflower)
Onions (sliced) - 55 gm.
Gram flour - 125 gm.
Green chilies - 10 gm.
(chopped fine)
Ginger(chopped fine) - 5 gm.
Coriander leaves - 20 gm. (chopped)
Oil for deep fry & Salt to taste
For Gravy :
Tomatoes (chopped) - 250 gm.
Onions (sliced) - 160 gm.
Red chili powder - 10 gm.
Coriander powder - 10 gm.
Cumin powder - 2.5 gm.
Garam-masala - 2.5 gm.
Turmeric powder - 2.5 gm.
Oil - 30 ml.
Water - 240 ml.

Salt to taste

METHOD :
KOFTAS :
Remove moisture from grated vegetables. Mix green chilies, ginger, coriander leaves, onions with vegetables. Add gram flour and form into lemon sized balls (koftas). Deep fry these in a wok.
GRAVY ::
In a pan heat oil and fry onions. Add red chilies, turmeric, coriander, cumin powder and garam-masala. Add chopped tomatoes, water and salt and cook till thick gravy is formed. Add koftas, bring to boil and remove from fire. Garnish with coriander leaves and sliced tomatoes. Serve hot with naan.
