MURGH MASALA(SPICY ROAST CHICKEN )
An Indian style recipe for roasted chicken, from southern India.

INGREDIENTS :
For Roasted Chicken:- Chicken - 1 1/2 kg.
(cut into medium pieces)
Ground black pepper - 2.5 gm.
Turmeric powder - 2.5 gm.
Ginger/garlic paste - 6 gm.
Ghee (clarified butter) - 5 gm.
Potatoes - 350 gm.
Salt to taste

For Gravy :
Cumin seeds - 3 gm.
Ghee (clarified butter) - 125 gm.
Onions sliced - 110gm.
Green chilies - 3 gm.
Garlic - 8 gm.
Ginger - 5 gm.
Chili powder - 2.5 gm.
Tomatoes ripened - 165 gm.
White poppy seeds - 6 gm.
Fresh coriander - 8 gm.
Garam-masala powder - 2.5 gm.
Chicken stock - 240 ml.
Salt to taste

METHOD :
Roasted Chicken:-
Wash and dry chicken pieces, rub all over with salt , pepper , turmeric and fry lightly in a pan . Removing to a roasting tray , add potatoes ( rubbed with salt and pepper ) and pour ghee over these. Roast in a moderate oven for approximate 20-30 mins, till done.

Gravy :-

Roast cumin seeds in a dry pan over medium heat , stirring constantly till brown . Grind with mortar and pestle. Heat ghee and fry onions , chilies, ginger, and garlic till brown. Add chili powder , tomatoes , poppy seeds , cumin and garam-masala and cook on low heat till tomatoes are soft. Mash with spoon . Add chicken stock and bring to boil . Adjust seasoning , add coriander leaves and pour into a separate bowl to accompany chicken.
Time taken -- 2 1/2 hrs.
Serves -- 4.
