KABAB (LAMB & VEGETABLE SHASHLIK) |

| INGREDIENT: Boneless lamb(cubes)-500gm. Ginger/garlic paste-25gm. Green chili paste - 8 gm. Green peppers - 100 gm. (cubes) medium size. Tomatoes (cubes) - 165 gm. Onions (cubes) - 165 gm. Pepper - 5 gm. Oil for basting. Salt to taste. |
METHOD: Mix ginger/garlic paste,chili paste, salt, pepper and a little oil. Marinate lamb and cubes of peppers,tomatoes and onions in this mixture for 1 hour (to speed up marination, add a tbspn of papaya). Arrange mutton cubes, onions, tomatoes and green peppers on bamboo skewers alternately. Brush these with the emaining marinade. Cook in a griller till done. Turn frequently to cook from all sides. Serve hot with yogurt relish (raita) as an ccompaniment. Time taken -- 1 1/2 hrs. Serves -- 4. |
