METHOD
: Slit the eggs on one side (still keeping eggs whole). Heat oil in a wok and fry potatoes. Remove and set aside. Add turmeric and chili powder and the eggs to the wok, fry till brown all over, remove. Add onions, ginger, cinnamon (broken into pieces), cardamom (split), cloves and green chilies and fry till brown. Add half of the tomatoes and fry for 5 mins. Add turmeric,ground coriander, fennel and chili powder and fry for another 5 mins. Add remaining tomatoes and cook further. Add potatoes, salt and 1 1/2 cups of water. Boil till done . Add eggs and cook for 15 mins. Garnish with coriander. Serve hot with boiled rice. Time taken -- 50 mins. Serves -- 6. |
