LIME PICKLE
A delicious lime pickle from the eastern part of India.

INGREDIENT :
Lemons - 30 nos.
Panch-phoran - 5 gm.
Ginger (minced) -20gm.
Salt to taste.
METHOD :
Wash 15 lemons. Cut each lemon in 4 segments, lengthwise. Rub plenty of salt and sun in a jar for 4 days. On the fourth day, squeeze the juice of 15 lemons and pour on the salted segments in the jar. Add remaining spices and sun for a month.
